Protein Pancakes!

I’ve tried to create a protein packed version of almost every baked good imaginable. Many of my initial variations with pancakes ended up tasting like rubber, but I finally found the greatest combination. They have the perfect mix of fluffiness, flavor and protein! Best of all, they take minutes to make and can last for a few days when refrigerated. They are also great for taking on airplanes or a snack or saving for dinner with eggs and bacon 🙂

1/2 cup Kodiak Cakes: Protein Packed Flapjack & Waffle Mix

2/3 scoop Designer Whey Protein Vanilla

1/2 cup water or unsweetened almond milk

Whisk ingredients together and
pour batter into pancakes on hot griddle or skillet. Wait until bubbles form and flip.

I love them plain, but feel free to add sugar free syrup, chocolate chips, blueberries or walnuts on top!

  1. I just made these pancakes and they are delicious just like you promised! Thanks so much for this recipe. I had never heard of the Kodiak Cakes mix before. I found the whole wheat, oat and honey mix at my grocery store so not quite as high protein but looking online I found I can buy the higher protein one at Target, so I will get some of that when this box runs out. This is really a big help to me as I do my own “21 day Challenge” preparing my own meals ahead of time. No more styrofoam protein pancakes 🙂
