Cheesy Balsamic Asparagus Chicken
This mouth-watering healthy chicken recipe is delicious and doesn’t break the caloric bank.
2 chicken breasts
1 ounce white cheddar or mozzarella cheese
6 mini salami
10-12 stalks asparagus
1 small tomato
1-2 Tbsp. Balsamic Vinegar
Fill a pot half full with water. Snap the asparagus stalks in half and place in pot. Bring water to a boil. Butterfly chicken breasts and place on skillet on low-medium heat. When asparagus pot reaches a boil, reduce heat and cover with lid. After 3-4 minutes flip chicken breasts. Top with cheese, salami and tomato. Cook for an additional 4-5 minutes. Make sure chicken is fully cooked (thicker chicken breasts may require a longer cooking time, but the key for maintaining a juicy chicken breast is slow and low heat). Drain water from asparagus pot and place half on a plate. Top with the chicken breast and follow with the rest of the asparagus. Use a spoon to drizzle with balsamic vinegar. Top with black pepper if desired!
