Cheesy Balsamic Asparagus Chicken

This mouth-watering healthy chicken recipe is delicious and doesn’t break the caloric bank.

Ingredients

2 chicken breasts

1 ounce white cheddar or mozzarella cheese

6 mini salami

10-12 stalks asparagus

1 small tomato

1-2 Tbsp. Balsamic Vinegar

Instructions

Fill a pot half full with water. Snap the asparagus stalks in half and place in pot. Bring water to a boil. Butterfly chicken breasts and place on skillet on low-medium heat. When asparagus pot reaches a boil, reduce heat and cover with lid. After 3-4 minutes flip chicken breasts. Top with cheese, salami and tomato. Cook for an additional 4-5 minutes. Make sure chicken is fully cooked (thicker chicken breasts may require a longer cooking time, but the key for maintaining a juicy chicken breast is slow and low heat). Drain water from asparagus pot and place half on a plate. Top with the chicken breast and follow with the rest of the asparagus. Use a spoon to drizzle with balsamic vinegar. Top with black pepper if desired!

Enjoy your insanely low carb, high protein meal and add it to your list of healthy chicken recipes!

  1. Hi Katelyn, I tried the healthy chicken recipe tonight. It was very nice and easy to prepare. I didn’t have any asparagraus so I used broccoli and I added rice to my dinner. Hope all is well with you and Zach. You are probably anxious to get home by now. All my love always, Grandma
